A couple of dumb breeding questions

I'm guessing these questions are probably quite stupid and that the answers are pretty straightforward, but I just want to be 100% sure before I get into the process any further.

-I've recently EV trained a hatched Starly/Staravia along route 202, battling Shinx and other Starly to raise attack and speed, with a Bidoof thrown in at the end for HP. So now that I've maxed out the EVS, it should be perfectly safe to just battle any old pokémon and not have to worry about the stats at all,. right?

-Also, I intend on raising a Roserade later today, but wasn't sure how I should go about breeding. Would hatching a Roselia instead of a Budew have any negative effects on stats? What I mean by that is, would raising it from the lowest stage possible be more beneficial? I've never really had to raise a pokémon that has a 'baby' in it's line before, so this is somewhat new to me.

Be sure to get the Effort Ribbon from Sunnyshore Market. I'm not sure it means the EVs are maxed out, but if she doesn't give it then you definitely have more work to do. But yeah, once its EVs are full I don't believe they change any.

As for Budew, only thing I can think of is if you want Water Sport or Worry Seed, as Roselia doesn't learn these.

Lex hit the two nails right on the head. ;) If your pogey is completely EV trained, you can do whatever you want to to raise its levels, including putting it in the day care, using rare candies, battling random trainers and wild pokemon, etc. As for the benefits of starting from a baby as opposed to a middle evolution, there are none aside from movepool. The stats will be the same in the end. :)
