So in the anime, many things are different compared to the game version and we all know that... hopefully. Pokémon evolution is no different and it's a bit rare to see a Pokémon evolve after a true battle... in fact, that is one of the rarest events to happen in the Pokémon anime unless I missed some pretty noticeable ones of course.
Evolution through battle
Ash's Charmander - Charmeleon = after fighting a horde of Exeggutor, Charmander immediately evolved into Charmeleon. I don't even think we should count this here since it was approximately 50 Exeggutor... 50!!!
Paras - Parasect from that girl who made medicine from mushrooms = defeated Ash's Charmeleon and boom.
Slugma - Magcargo from that girl who had a crush on Ash in the Johto saga = sometime after the battle with Ash, her Slugma evolved into Magcargo. This is assuming she didn't have to pass through some crazy, agonizing event to have it evolve.
Evolution during a battle
Countless as well... Paul's Elekid, May's Combusken, Misty's Poliwag, recently, Jessie's Yanmega and many more.
Evolution to meet a certain cause
Like love, power, greed, etc. Ash's Grovyle, Ash's Taillow, Brock's Golbat, girl's Ponyta, Ash's Chikorita, Ash's Charmeleon... you get the point.
