EV Training Question

Hey all, I just started up a new game on fire red and got a charmander. I want to max out its stats in special attack and another (not sure which one yet), but I'm a little confused on EV training. I know how 4 ev points is 1 stat point, but does every pokemon you fight affect your stats? Do I have to fight only pokemon that give special attack and the other stat all the way until level 100 or do ev points stop affecting stat points when it reaches the 510 max? Thanks
 
Your Pokemon stop gaining EVs when you get the 510 max, and all Pokemon give EVs.

Go, fight Pokémon that give Sp.A EVs. Good luck FINDING THEM when you just started!

EV training is best done AFTER you beat the Elite Four, or at least enough of the game that it's not difficult to take on anything.

Pokémon stop gaining EVs in a specific stat when it hits 255 (the last number that makes any stat difference is 252, for 63 points). You're done training, PERIOD, when you hit 510 TOTAL. You can train to the max in two stats, and have six points extra to put in any of the other ones. I don't recommend this (I tend to split at least one).
 
Ok so after starting the game, I immediately stored my charmander without defeating a single pokemon (because there aren't any sp. atk pokemon in the beginning). If I pull it out later and say, defeat 252 oddish to get my 252 sp. atk evs, then defeat 252 of another pokemon of a different stat, plus get the remaining 6 ev points, then after all that, I can freely fight any pokemon and evs no longer affect the stats?

Yes, you're done. Then just level your future-Charizard =)
