Im sticking to nintendo (for me), cause thats my specialty
Okay heres my list:
NES
1. Super mario bros. - Undeniably one of the greatest games not just for the NES but in existence. Anyone who disagrees is a moron, no questions asked. This game also revived the game industry.
There are so many others too. mario bros 3, LOZ, metroid, kirbys adventure, etc. Many of those titles were revolutionary in their own right. What you choose is basically your own preference. All these games paved the path for the future.
SNES:
1. Super Metroid- There is no doubt in my mind this is one of the greatest games ever made. Surpassed the original in just about every single way.
2. LOZ ALTTP: Another masterpiece. Like sm, alttp was a huge step above the original.
3. Mario world 2- While the original mario world was also a gem, yoshis island was really the more original game. Unfortunately, this was one of the last good yoshi games
There are so many more honorable mentions. DK Country for example, the game that graphically pushed the SNES beyond its limits.
N64:
1. Ocarina of Time- Successfully brought the zelda franchise to the third dimension. Anyone who played this, even today, is left breathless.
2. Majoras Mask- Brought the zelda world in an entirely new direction with its unique gameplay elements
The N64 may have been a step below the SNES, but it still had some great games. Mario 64, being one of the first 3D games, and many more cool titles. Zelda pretty much dominated this console though, most people who recognize the N64 think of zelda.
Gamecube:
1. Metroid Prime- Did the exact same ocarina did for zelda
2. Super Smash Bros Melee- While the original Smash Bros was a great N64 title, this one pushed it beyond a mere fighting game into one of nintendos most respected series
3. Windwaker- Its cel shaded artstyle brought the world of zelda in a new view for the next generation.
Wii:
Twilight Princess disappointed me. Did it do what other zeldas did not? No. Therefore, I highly doubt it will rank amoung the Wiis best games. MP3 was the better game. The best Wii game out to date with its innovative control system. Truly advanced shooters. I think alongside mp3 will be mario galaxy and brawl. These titles will likely be amoung the best for wii.
Portable titles worth a mention:
Pokemon: A truly addicting RPG. Almost all GB players think of Pokemon. Doesnt matter which one you pick, most are pretty much the same down to its core.
Metroid Zero Mission: Used a super metroid revision on the original game. Worth a pick up. Fusion and Return of Samus are also worth looking into.
Kirbys Dream land: Actually the first kirby game. Fun in its own right, but it was adventure that invented the "copying" of powers.
Zelda LA: While not a personal favorite of mine, its not hard to see why so many gamers love this title. All the other portable zeldas are also solid aventures, especially the massively addicting four swords.
Not much else IMO. I always found the consoles to be nintendos strong point (though many people disagree)

from what I played, castlevania, gunstar heroes, sonic, resident evil 4.
