Does anybody know how to get the IP address of someone you are instant messaging? I've been searching various websites to find out, but I just can't find simple instructions anywhere!
 
Unless it's peer-to-peer instant messaging, you can't. It is impossible.

Otherwise you can simply examine the open TCP/IP connections using a tool such as netstat.
 
Is it possible to aquire anybody's IP through an e-mail or anything?
 
Sometimes the IP address of the sender is recorded in the mail header, but not always. It depends on the SMTP server configuration. Note that there are a few IP addresses in the header - for the destination mail server, relay servers etc.
