Homemade Marshmallows (Super Easy!)
Ingredients:
3 Packets Unflavored Gelatin
1/2 Cup Water
-------------------------------
2 Cups Granulated Sugar
1/2 Cup Water
1/4 Tsp Salt
2 Tsp Vanilla Extract (Or a Tablespoon)
Cornstarch (For dusting)
Directions:
Dust an 8- or 9-inch square pan with cornstarch. Set aside.
In a small bowl or container mix gelatin with 1/2 Cup Water. Stir well so that there are no clumps. Set aside.
Combine all of the sugar with 1/2 Cup of water in a pot or a heavy saucepan.
Cook over medium heat and stir constantly until dissolved.
Add the soaked gelatin mixture into the pot, and bring the mixture to a boil while mixing the syrup constantly.
Remove from heat. Pour into a large mixing bowl and let stand until partially cool.
Add salt and vanilla extract.
Beat on high speed with an electric mixer until soft and double in volume. About 10-15 minutes. (Stiff peaks will form that resemble whipped egg whites.)
Pour into the cornstarch dusted pan. Distribute the marshmallow mixture evenly throughout the pan.
Store in the fridge for a couple of hours or over night.
Cut into 1.5 inch pieces and roll in some more cornstarch. (This helps dry up most of the additional stickiness.)
