could you tell me how many bidoofs I'd have to battle to get 112 EVs. You can include the use of vitamins or items.

Bidoofs give you an ev of +1 HP.
112 Bidoofs will get you 112.
If you used 10 vitamins of any sort, that's 100 EVs right there, but I'm sure you want to focus on a specific stat which I assume is HP so you would want to take 10 HP-ups to get that. Keep in mind, you can only take 10 vitamins of a specific stat. If you want more, you need to do the training.
You can finish that off with 12 Bidoofs.
