Did anyone else know that an Eevee and a Delphox make a fennekin?! I did not know this so I was very very shocked when they made an egg...

This is no surprise at all to experienced Pokebreeders -- the baby Pokemon is always the unevolved form of its mother, and every Fennekin will ultimately evolve into a Delphox as it levels up (you would already know this if you picked Fennekin at the beginning of the game). Heck, you could even breed that Delphox with a Serperior and still get a baby Fennekin out of it.... (and don't ask how that's supposed to make logical sense.)

Still, the idea of limited hybridization (i.e. breed species A with B and get a species C as a result) has always held some appeal for fans, it's just that it would complicate things rather quickly.

That's not hybrids, there's a thing called Egg Groups. An Egg Group is a group of pokemon that can breed with each other, Delphox and Eevee are part of the same Egg Group, so they can breed with each other.

Like Stratelier said, the baby pokemon is always be the same as the mother, in your case you had a female Delphox, so the baby was a Fennekin, which is the first stage of Delphox.

Nothing new. Egg groups have been around since breeding was possible (Gen II, some 10 years or more ago). The only "hybrid" thing that such combos produce are otherwise-impossible movepools, like a Charmander getting Outrage from a Dragonite parent.

In gen 6 thats been slightly modified For example, if a male Dragonite that knows Outrage is bred with a female Charizard that knows Flare Blitz, the resulting Charmander will know Outrage and Flare Blitz (only Outrage prior to Generation VI).
