I have a few questions as to how the Pokebank Pokedex works.

So by registering all my gen 6 and 7 games, as well as all the dudes i've had through the years of gen 3-5 I have around 100 dudes to go to have a full national dex in Bank - however some of these are entire evolution lines with some not in the Alola Dex. So if I wanted these to register to the Pokebank Pokedex, would getting just one then evovling it twice count for that, or would I need to insert it at each evolution stage for it to register?

I believe you would need to insert it at each stage. Since you're not evolving it in Pokemon Bank, Bank never sees the intermediate stage, and so it can't register it.

From what I understand, it just synchs up your in-game dex with the Bank dex.

You don't need to insert it into the bank, just having it on the game counts. The game keep track of all the Pokémon.
