In the articles of pokemon belonging to anime characters, I've noticed that the most recently used moves are italicized. I ask, WHY? Who cares which moves were most recently used?

Because it can imply that the Pokémon does not know the normal text moves anymore. Some moves haven't been used in hundreds of episodes. It is one of the ways the anime relates to the games, supposedly, that the Pokémon can only know four moves, and the rest were "unlearned" persay.

Yeah, I've noticed that a good 95% of them use only four moves at a time in each battle.

Only one or two Pokémon in the anime have ever used more than four in one episode. And that was, like, Kanto and Orange.
