IVs and EV training

When I'm putting an EV spread together, how important is it to consider the IVs of the pokemon in question? I'm still completely new to the whole EV thing and am in the process of figuring it out. Thanks!
 
You will want to consider the IVs in some cases such as:

-You are trying to hit a certain speed that is not maxed, but will take more EVs to reach without a flawless IV. For example, I need my Naive Azelf to outrun Gengar so I am EV'ing for 352 speed. That would normally take 216 EVs. If the spread would be 216 EVs with a flawless IV, you will need 220 for an IV of 30, 224 for IV of 29, and so on. If you can't reach your goal with a reasonable amount of additional EVs, you should probably rebreed / trade for another one.

-If you need to hit a certain HP number for Leftovers, substitute, etc. An example would be Scizor, who wants to be at 343HP rather than 344. If you have an IV of 30, you would use 252 EVs instead of the recommended 248 to hit the same number.

As far as the offensive and defensive IVs, you obviously want the relevant ones as high as possible, but you would almost always EV the same way either way.

Best thing to do is take a look at the EV spread and see if it is hitting any 'magic' numbers like I mentioned above. If those numbers seem important, then getting that value will do more for you than matching the suggested EV spread. If you put some thought into what you are doing before you EV, I think you'll be fine.
