I am trying to be clear as possible here, so this is what I'm trying to figure out.

Has anyone taken stock on the moves each Gen 7 or Alolan Form has used in the videos and trailers so far?

Like, for example: the theoretical Alolan Farfetch'd has been shown using Scald, Flamethrower, and Night Slash n the trailers for t.

I've been keeping a list in the confirmed information thread. Under each Pokemon's tabs there's a "known moves" bit. Some aren't confirmed by name but by matching their animations, so they aren't 100% confirmed but are very likely.

Here's what I have so far:

Rowlet: Tackle, Growl, Leafage, Peck, Razor Leaf
Litten: Scratch, Ember, Fire Fang
Popplio: Pound, Growl, Water Gun, Disarming Voice, Bubble Beam
Solgaleo: Sunsteel Strike
Lunala: Moongeist Beam, Cosmic Power
Grubbin: String Shot
Charjabug: Spark, Crunch (and String Shot)
Vikavolt: Spark, Bug Buzz, Zap Cannon (and String Shot, Crunch)
Yungoos: Tackle, Sand-Attack, Leer
Gumshoos: Bite, Bide, Super Fang (and Tackle, Sand-Attack, Leer)
Mudbray: Mud-Slap
Mudsdale: Highhorse Power, Stomp (and Mud-Slap)
Fomantis: Solar Beam, Razor Leaf
Lurantis: Solar Blade, Razor Leaf (and Solar Beam)
Stufful: (Haven't been able to identify the move it used against Pancham yet)
Bewear: Hammer Arm
Sandygast: Sand Tomb
Palossand: Shadow Ball (and Sand Tomb)
Crabrawler: Dynamic Punch, Close Combat, Power-Up Punch, Crabhammer, Stone Edge (Missing the move it used against Cresselia, I think it might have been Pursuit but not 100% sure)
Minior: Power Gem, Ancient Power (and either Take Down or Double-Edge, not sure which)
Pikipek: Peck
Togedemaru: Tackle, Discharge, Spark
Komala: Slam, Rapid Spin, Swallow
Comfey: Synthesis, Petal Blizzard
Cutiefly: Fairy Wind
Bounsweet: Magical Leaf, Sweet Scent
Mimikyu: Slash, Shadow Sneak, Feint Attack
Pyukumuku: Pain Split (not sure what the other move it used on Minior was, maybe Soak?)
Morelull: Spore, Sleep Powder
Rockruff: Bite, Howl, Sand-Attack, Rock Throw, Stealth Rock, Rock Tomb
Salandit: Toxic, Flame Burst (also used a Poison-looking move, maybe Acid or something, but I'm not sure)
Bruxish: Psywave
Wimpod: Struggle Bug
Oricorio: Revelation Dance
Drampa: Dragon Breath
Turtonator: Shell Trap, Dragon Pulse, Explosion
Tapu Koko: Nature's Madness
Magearna: Fleur Cannon, Flash Cannon, Helping Hand, Lucky Chant
Wishiwashi: Hydro Pump, Aqua Tail (and either Take Down or Double-Edge, like Minior)
Vulpix: Icy Wind, Aurora Beam, Ice Beam
Ninetales: Ice Shard, Blizzard (and Icy Wind, Aurora Beam, Ice Beam)
Sandshrew: Ice Ball
Sandslash: Metal Claw, Icicle Crash (and Ice Ball)
Meowth: Pay Day
Marowak: Will-o-Wisp (also what looked like a Ghost bone move)
Exeggutor: Dragon Rush, Seed Bomb
Raichu: Psychic, Stoked Sparksurfer
Rattata: Bite, Focus Energy
Zygarde 10% and 50%: Thousand Arrows, Thousand Waves
Zygarde Complete: Core Enforcer

Stufful: (Haven't been able to identify the move it used against Pancham yet)

I think that was Dark Pulse. It was not-very-effective against Pancham (judging by the "effectiveness" noise), and given past examples of Dark Pulse's animations, it looked a lot like it. So I think you can label it as Dark Pulse.

I thought it could be that, but it just seems a really strange choice of move for them to learn so I wasn't sure whether to add it. I guess weirder things have happened though.
