Maybe I'm remembering wrong but don't we learn all about the legend of Ho-Oh from Morty?
I thought he said something about how Ho-Oh destroyed everything on the planet or everything on the planet was destroyed...
Maybe I'm just mixing everything up but I'm not sure so I'm wondering if anyone here knows.

But if I'm right, does anyone know what ep we hear this in?
 
The episode you're talking about is, "For Ho-oh the bells toll" in late Johto.

Eusine and Suicune are also in the episode. Morty explains how Ho-oh created the 3 beasts.
 
Didn't Ho-Oh's legend get explained in "Pop Goes the Sneasel!" too? How everything got destroyed in a war and Ho-Oh restored the land? Something like that...
 
Its explained three times.

There's the Morty Gym episodes, where they visit the burned tower and tin tower. Morty explains how Ho-oh used to visit humans and how it would only return to Earth if all humans and Pokemon live in peace.

Then they visit Morty a second time after they come back from the Whirl Islands. This is the ep I described above, with Eusine and Suicune in it, and he explains how Ho-oh actually created the beasts.

In "Pop goes the Sneasel" the flame for the league is Ho-oh's flame (like the Indigo league had Moltres flame), and TR just try to steal it.

After that Ash sees Ho-oh again right before he heads to Hoenn, and then yet another time at the end of Battle Frontier.

I'm also pretty certain Ash tells Dawn he met Ho-oh back in DP4.

Well, revival is more accurate, since he said that they were "created out of the dead pokemon that perished in the Burnt Tower when it was destroyed", which implies that they were revived rather than actually created.

After that Ash sees Ho-oh again right before he heads to Hoenn, and then yet another time at the end of Battle Frontier.

Though in the case of the latter, Ash wasn't the first one to see Ho-Oh. In fact, May's the one who saw Ho-Oh first in that scene (and it appeared to the entire lot.). I'm not even sure why it appeared to the entire lot (I certainly can't say that Scott was pure of heart. Brock, as well, seeing how he didn't seem pure enough to try and control his hormones.), in fact, that scene kinda downplayed Ho-Oh's importance.

I'm also pretty certain Ash tells Dawn he met Ho-oh back in DP4.

He did, it was even accompanied by a flashback to Ho-Oh flying.
 
I don't remember all of the details, but this is what I remember.

Morty mentions that Ho-Oh was a legendary pokemon coveted and attacked by humans. As a result, it fled, only appearing to humans and pokemon that got along with each other.
In the second legend, Morty or Eusine mentions that the tower Ho-Oh resigned it was set on fire. Ho-Oh felt sorry for three pokemon that lost their lives in the flames that it gave them new life in the form of the Legendary Beasts. Eusine mentions that the three beasts are the eyes and ears of Ho-Oh; residing on the surface of the Earth to test whether humans and pokemon can get along with each other. Also, they are rumored to appear in a great crisis, such that when the Crystal Bells in said episode endangered the pokemon in the town.
The third episode, with Ho-Oh's flame, mentions that there was a war between humans. Ho-Oh burned all of the weapons with its flame and stopped the war. Then, its flame was used as a celebration during the Silver Conferences.
