We almost all know that Anime = Not in Brawl. However, making movesets and reading them is fun, so why not? I'll begin, and show you all an example.

Fried Ricer
Series: Fighting Foodons
Symbol: diagonal Meal Ticket
Weight: Middleweight

A: A hit with his left pan.
Combo: A hit with the right pan followed by wild flailing hits.
Run Attack: Sticks one pan out whilst running.

Forward A: A sweeping hit with both pans.
Up A: He headbutts up by tossing his head-rice up.
Down A: A spinning sweep kick.

Smash Forward: A smashing to-the-ground hit with both pans together.
Smash Up: Fried Ricer thrusts both pans up and screams "Hyaa!"
Smash Down: Ricer crouches, puts both pans to the ground, and spins. Fast.

Fried Ricer can float like Peach. He derives this from some hovery moments in the show.

Jump Neutral: He sticks his legs and arms out.
Jump Forward: A thrust kick. It sends Fried Ricer forwards a bit.
Jump Back: Ricer turns around and attacks with one pan.
Jump Up: He throws his pans up a little.
Jump Down: Fried Ricer sticks a leg out and slams down.

Grab: A normal grab with both pans tied to his back.
Grab Hit: A hit with his plate neck.
Throw Forward: Just a toss.
Throw Back: Uses a pan to hit the foe back.
Throw Up: Puts the victim in a pan (like a piece of food) and tosses them up.
Throw Down: Throws the foe up and hits them down with a pan (think Aether with the enemy thrown, not the weapon)

B: Super Hit, A fierce hit with both pans, chargable.
Side B: Fry Ray, Fried Ricer flails both pans and launches small projectiles that go a short distance. Really fast. Really weak.
Up B: Pannonball, Fried Ricer jumps and spins with both pans put together. It's similar to a weaker, better-for-recovery Screw Attack.
Down B: Battle Lock: Fried Ricer strikes a pose. When attacked, him and the opponent have to press the attack buttons furiously to block and attack until one player gets an attack through.

Taunts
Up: Laughs while Omelette flies into view from behind him.
Side: Faces the screen and does a small victory dance whilst saying "Fried...Ri...Cer! Fried Ricer!"
Down: Crouches, swings his pan and and says "Ricer"!

Final Smash: Feastivus, Fried Ricer's teammates come and form into Feastivus. This turns Fried Ricer into Super Fried Ricer. He's powered up whilst Feastivus (In the background) attacks with claw swipes.

Who's next?

I don't know much about the size of the Super Smash Bros. movesets, so I'll just do a couple of moves in the format of the DOJO. I hope this is good enough.

Character: Chi
Series: Chobits
Symbol: Pale-blue oval with an ear port in the centre
Weight: Light

Chi is one of the protagonists of the manga series Chobits, and it's anime adaptation. She is a persocom, an android that is shaped, feels like, acts like and is almost indistinguishable from a genuine human. More than that, she is one of only two Chobits; legendary Persocom's that are said to have emotions and can act without any programming, or even an Operating System.

While she moves about the stage and does not hide in the background, in the game she is somewhat similar to the Pokemon Trainer in that she rarely does any fighting directly. Instead, she prefers to summon characters from the Chobits universe to fight for her, although she can certainly be hit by attacks and does perform a few attacks solo.

When she is hit, she can be sent back quite a respectable distance depending on the opponent's weight class. Despite that, for any of her attacks to do respectable damage she must be close to the opponent. This makes Chi a difficult character to use, and true mastery is hard to accomplish.

Moves
Standard Special: Atashi - Chi summons Atashi from a "A City With No People", and throws her at the opponent(s). Less damage is dealed on consecutive hits, similar to Pikachu's Thunder Jolt.
Side Special: Not for me - As an opponent comes in close, Chi momentarily tethers them with her cables, freezing them in place. They are raised into the air and then thrown. The heavier the opponent, the more damage is done.
Up Special: Concussive Blast - Chi tethers an opponent with her cables and unleashes a concussive blast to send them flying. Conversely from her Side Special move, the lighter the opponent, the more damage is done.
Down Special: Sumomo - Chi summons Sumomo who will blow her whistle to start the wakey-wakey exercises. The whistle bursts do small amounts of damage and, like Mario's F.L.U.D.D., will push an opponent backwards.
Recovery: Gravityless - Chi raises herself vertically a good distance and then jumps left or right depending on which way the character faces. Vertical speed is slow, although her horizontal speed is fast.
Final Smash: The Person Just For Me - Chi calls Hideki to her side. They stare at each other and then a thick, white light shoots into the sky. Anyone hit by this attack sustains massive amounts of damage. Chi can walk around the stage while this happens, and she will be invulnerable until Hideki disappears and the attack ends.

Taunts
Chiiii - Chi says her name while clasping her hands together.
Underpants - Chi pulls out a pair of underpants (or on very rare occassions, boxers that say "Good Job") and stretches the waistbands before throwing them. The underpants do no damage, although the boxers will cause a very small amount of damage.
Bakery - Chi will pull a cake out of hammerspace and smile sweetly.

Costumes
First clothes - The default clothing; Chi wears her plain brown dress.
Kidnapped - Chi wears the white and lavender dress she had on when she was kidnapped by Yoshiyuki Kojima.
Discovery - Chi is wrapped in white bindings.
Apron - Chi wears her bakery uniform.
Freya - Unlockable costume; Chi will be in Freya's black dress.

Character: Impmon
Series: Digimon
Symbol: A Season 1 Style Digivice
Weight: Light *for Impmon*, Heavy *for Beelzemon Blast Mode*

Moves
Impmon
Standard Special: Fire Crackers (throws Japanese firecrackers)
Side Special: Badaboom (creates a flame from his hand and flicks it)
Up Special: Infernal Funnel (makes multiple ice crystals and hurls them)
Down Special: Punt (kicks like a meteor)
Final Smash: Demon Lord Transformation into Beelzemon Blast Mode
Beelzemon Blast Mode
Standard Special: Double Impact (shoots two bullets out)
Side Special: Death Slinger (shoots multible blasts from his large gun)
Up Special: Chaos Flare (draws a star in the air and shoots a huge beam from it)
Down Special: Darkness Claw (slashes with his fingers)

Taunts
"You wanna piece of me?!"
"Take that!!"
"Hahahahaha! Want more?"

Uh, Turbo? No offense, but the Up Specials have to be used for recovery (mostly). Unless Impmon\Beelzemon Blast Mode is a really good jumper, he's going to need some attack that

A. Moves him upwards

OR

B. releases a line upwards

Sorry.

(It can be used like that, but Impmon is a good Jumper and Beelzemon Blast Mode can fly)

Now I have another one.... BlackWarGreymon

Character: BlackWarGreymon
Series: Digimon
Symbol: A Season 1 Style Digivice
Weight: Medium

Moves
Standard Special: War Blaster (shoots green projectiles after drawing energy into his arms)
Side Special: Black Tornado (moves like a sideways tornado)
Up Special: Ultra Tornado (an upward Black Tornado that creates two whirlwinds and can be used as a recovery move)
Down Special: Dragon Crusher (creates a shockwave with his claws)
Final Smash: Terra Destroyer (creates a huge yellow ball of dark fiery energy and hurls it)

Taunts
"Who's YOUR creator?"
"RRRRRRRAAAAAAAAAAAAAAAAAAAGGGGHH!"
"Hrmph... too easy!"

Let me try one.

Jaden/Judai Yuki (works like Pokemon Trainer)

Down+B: Monster Recovery

Elemental Hero Bubbleman
B: Bubble Illusion (uses a giant bubble to trap the enemy)
Side+B: Bubble Blaster (whips out a bazooka and launches a water grenade)
Up+B: Bubble Shuffle (the water jets on its back launch him sky high)

Elemental Hero Sparkman
B: Hero Counterattack (Counter)
Side+B: Spark Blaster (works like ZS Samus' paralyzer)
Up+B: Static Booster (Can charge, then launch with a static field around him)

Elemental Hero Clayman
B: Giant Fist (Charges up like DK's fist attack)
Side+B: Clay Charge (shoulder tackle)
Up+B: Spin Jump (writes itself, can't get too high because of Clayman's weight)

Final Smash: Elemental Hero Flame Wingman (Uses Skydive Scorch, like Super Sonic)

I quite like noodlechefkyles idea but I'd like to see burstinatrix and avian instead of clayman and bubbleman. Only because you could then have shining flarewingman as the super smash and have him play a fusion gate card to activate it.

I'm surprised that no one has created a moveset for Naruto or a Naruto character yet.

I'll try a few:

Ichigo Kurosaki(Bleach)

Stantard Special Move: Charged hit(works like Marth/Ike's B moves)
Side Special Move: Getsuga Tensho (launches a beam of blue energy in whatever direction the move is aimed)
Up Special Move: Jump Slash (works like Kirby's and Ike's up specials)
Down Special Move: Zangetsu Swing (swings Zangetsu around above his head, launches the blade in any direction when A is pressed)
Final Smash: Bankai(Tensa Zangetsu, powered up normal form, faster, stronger).

Entrance: Comes in in human form, then eats Soul Candy, going in to Soul Reaper form.
Special alternage colors: Hollow Ichigo(looks like Ichigo's Hollow form, the way it exists in his mind, comes with alternate voice)
Taunts: Up(swings sword around his head), Side(tosses Kon in a direction), Down(puts sword in ground, chuckles to self)

I know. But I added Clayman to compensate for the three weight classes.
