Alolan Dex Pokémon are listed in National Dex order. Note that, even though numbers go into the 800s, a lot of them are shiny sprites, Mega Evolutions, Gender Differences and Form Changes.

000 - The first spot. Probably meant to be blank, it's just before Caterpie.
021 and 022 - Between Alolan Raticate and Spearow. Since Raticate and Spearow are right next to each other normally, maybe they're fillers for Alolan Raticate female sprites.
599-602 - Between Zygarde 10% and 100% forms. They could be fillers for Zygarde's Core and Cell. This also indicates that all of Zygarde's forms will have shiny equivs, since there are four space and not two.
633 and 634 - Between Gumshoos and Grubbin. There could be Pokémon between Gumshoos and Grubbin, but I think it's more likely that they're more female sprite fillers.
641 and 642 - Between Vikavolt and Crabrawler. Could be more female fillers.
685 and 686 - Between Lurantis and Morelull. Possible more female fillers.
695 and 696 - Between Salandit's evo and Stufful. Likely to be a female equiv, since Salandit's description says it has gender differences.
799-802 - Between deflated Mimikyu and Bruxish. These four blank spots point heavily towards Mimikyu having a "true" form.
815 and 816 - Between Kommo-o and Tapu Koko. Could be more gender differences.


Other anomalies:
Ash Cap Pikachu don't appear to have shiny differences.
Mimikyu has two sprites, so this indicates it has at least two forms. One is it's regular looking form and the other a more deflated looking version, with it's head to the side. Maybe the deflated version shows more of it's true form.
Magearna also doesn't appear to have shiny differences.
The UB creatures on the other hand, do have shinies.
 
Very interesting. Can't wait to see what the full alola dex would be like!
 
000 is probably an egg or just a generic placeholder.

Alolan Raticate being followed by two blank images makes it obvious that Totem Pokemon are involved. Why would a new Pokemon be placed between Generation I Pokemon? To top it all off, Gumshoo and Lurantis are followed by blanks and they have Totem variants, too.

Mimikyu has two poses due to its ability. The fact that it is followed by four blanks heavily implies that Mimikyu will be a Totem Pokemon. The only anomaly is that Wishiwashi is not followed by blanks, but this could be explained if they dummied out the Totem sprites (perhaps originally Totem Pokemon actually had special designs rather than just bigger models) before Wishiwashi was picked to be a boss.

You're free to hold out hope for hidden Pokemon, but the less discussion there is about this possibility, the less disappointment we'll have to face next month.
 
Unfortunately, chances are we have seen every single Pokemon already, bar a few female forms and Totems.
 
021-022 I'm pretty sure Alola Rattata/Raticate don't have gender differences, unlike their Kanto counterparts.
 
The only thing that bothers me about the totem Pokemon theory is that there isn't a blank spot after Wishiwashi.

and a lot of people were speculating that Wishiwashi was the totem Pokemon for Lana's trial. We even saw a cutscene of it rising out of the sea.

Though, with that said Wishiwashi is already a large Pokemon so maybe they didn't need to create a new model for it? (since the totems seem to be larger than usual)

that would be my guess. either that or perhaps we don't fight Wishiwashi. like it's the totem, but for some reason (Team Skull, maybe?) we just don't battle it.
 
Huh, no blank spots after Alolan Ninetales. So I guess it won't be the Totem Pokemon of that island's Trial.

A shame, since I thought for sure there'd be a Trial that involves climbing the holy mountain, and then facing off against a Totem Alolan Ninetales or Sandslash at the summit.
 
Hm judging by these black spots there don't seem to be any other version exclusive Totem Pokémon. I would be very saddened by that, it was a fun way to make the difference between the two versions a litte bigger.
 
I'm pretty sure that Salandit's evolution is actually female-only, so the one we've seen is the female equivalent. I'm betting Salandit2 is the Fire Totem Pokemon.
 
If the Totem thing's true, then why didn't the Totem Pokémon in the demo have two slots in the list of mon in the Alola dex?

599-602. Have no idea what those four sprites might be, but you could be right concerning the cells and core.

So in total, there appears to be about:

21 unaccounted for sprites. Wasn't there originally like 40 or 45 scrubbed sprites though? So in total, about 19-24 more sprites to go through. Hmmm....
