Hi to all you budding and professional chefs out there!
This thread is where you can talk about the classic Chinese dish and share your recipes for the perfect bowl of Noodles!
Tell us how you like to make Noodles. Do you like them mild? Or Maybe a little more on the hot side?
However you like them share it with us!
 
In terms of Chinese noodles, I don't think I've made a dish that was truly a Chinese recipe. The closest I can say I've made noodles was a spicy udon noodle dish with shrimp. I've also made egg rolls that had cellophane noodles (also known Chinese vermicelli) inside them, and they were pretty good.
 
I too have also not made anything Chinese style but I have a great Thai Pad See Ew recipe. It's a great dish made with rice noodles (can be substituted for wheat noodles as they're a little hard to find) and soy sauce - Light and Dark. I tend to substitute the pork for sliced beef.
 
I love Cantonese Noodles the way my local Chinese place serves 'em. Regular noodles fried so they're super crispy and crunchy. They take those and put them in a big platter covered in this kind of beef broth / gravy concoction, then on top of that they pile steamed broccoli and cabbage and carrots and onions and water chestnuts and strips of beef, which they then ladle more of the gravy / broth stuff over. So delicious. And then, when you get down to the bottom of the mound of veggies... tons of noodles soaked with that gravy just waiting to be eaten... heaven on a platter.
 
I haven't cooked Chinese noodles much myself, but there's a restaurant I like that serves several different kinds of Asian noodles in customizable dishes. I prefer the udon because it's great to chew on, but they also have fried noodles, lo mein, rice, egg, and crispy noodles.

Are Chinese noodles SUPPOSED to be served in soup? Because that's how I see them being served most of the time, except for the classic lo mein.

I don't think they Have to be served in soup but in most restaurants they are except from the mentioned lo mein.
I Like the Classic lo mein syle noodles with a bit of Chilli and Herbs.
 
Noodles aren't SUPPOSED to be cooked in soup; that's just how they're most commonly eaten. They can also be stir-fried and vermicelli noodles are often steamed!
 
Bahahaha, I thought so, but American restaurants don't usually serve them drier I guess.

(it's frustrating when you're out and crave Asian noodles to go! It's hard to eat soup when you're hopping around a city.)
 
You have to remember that there are a lot of different types of noodles that are meant to be eaten in different ways.

In terms of Asian noodles you've got... Rice noodles, flat noodles, ramen noodles, hand-pulled noodles, vermicelli noodles, udon noodles, etc...

For a quick and easy recipe why not add your own spices and things to a bowl of ordinary supermarket noodles.
 
Ate Pho yesterday and thought of this thread.

Vermicelli noodles were used in the pho I had, I believe. Delicious.

Maybe this place did it differently? It said on the menu, vermicelli... I think. I could be mistaken though. Either way, it was delicious!
 
Uwah, my mistake. It seems it IS called vermicelli, specifically rice vermicelli.

I just normally seen that type called 'rice noodles.' Sorry about that :p

No matter the noodle name, the dish was delicious!

I'm Korean-American, so I'm not completely versed in Vietnamese cuisine. There's this one Korean dish that I like, Japchae. That has those cellophane noodles in it.

Anyways, do you have a favorite noodle?

Anyways, I'm off to dinner. Actually gonna get some Korean BBQ tonight for a treat! Bulgogi!!!!

Possibly some sweet potatoe noodles as well.
