Which type of Parmigiana do you prefer - Chicken, Eggplant, or Veal?

While I understand only Eggplant Parmigiana is truly Italian, I much prefer Chicken Parmigiana.

I hate aubergines/eggplants, and I prefer beef over veal. Over the process of elimination, that leaves chicken.

I loooooove my eggplant parmigiana. :3 I've become a vegetarian, so I don't eat chicken anymore, and veal...never was a fan.

Chicken parm is my favorite. I don't like it as much as I used to, but it used to be my absolute favorite food and it's still something I commonly order at Italian restaurants. I hate both eggplant and veal, so those are out of the question, but my second parmigiana choice would be shrimp parm. That's pretty good too.

I like Eggplant Parm the best. Probably because it reminds me of my aunt, since she makes it for every holiday. And, it's delicious.
