Stone Edge over Earthquake because EQ + Waterfall leaves you walled by Grass types. The Water + Rock combination has good coverage; it's only walled by Empoleon in OU, if memory serves me right. Also, you can swap the Attack and Speed EVs.

I said Brick Break or Superpower because Scizor doesn't have a way to deal with Heatran with its current set. You can keep Pursuit if you want to damage Ghosts as they leave battle.

Choice Scarf is better because you might need the extra speed to outspeed certain threats.

Slightly Bulky lead taunt Gyarados.
I'm not a particularly big fan of your lead gyarados, he's outsped by most common leads so taunt won't really help you out much there if you're trying to keep rocks off the field, and if you DD off the bat they set up anyhow. Good Gyarados, probably not an effective lead.

U turn is a terrible idea on swords dance scizor so good call there, I'd suggest running brick break over pursuit or superpower, so as to not waste your attack boosts, plus catching fleeing ghosts (or anything else for that matter) is not the best use of this set, its better to set up a free swords dance on the switch.

As for umbreon, if you're running protect you might as well use wish, it not only guaruntees that you heal yourself, its just another team support option, while moonlight looks good, sandstorm runs rampant in OU and destroys your recovery potential. Use wish.

Everything else looks good, I might get rid of that umbreon altogether though, I understand what you're going for, however you've already got wish support and other poke's can use curse more effectively, many of your poke's appreciate entry hazards as well as having them off the field, you're gyarados won't keep them off very effectively so it might be a good idea to invest in a rapid spinner who can also set them up. I think donphan, cloyster, or tentacruel are probably your best options, unless you feel comfortable using forretress and doubling up on that 4x fire weakness.
