Yesterday when I was doing to daily watering of berries I noticed that my Engima sprout sparkled! It looked just like how the grass sparkles with the pokeradar. I wonder if this is some kind of glitch that I came upon. Has anyone else ever noticed something like this before?
 
I've noticed them sparkle during the transition from one growth stage to another (which I'm surprised they show on-screen). That could have been what it was.
 
That's exactly what it was. They did the same thing in the last generation. It is a bit surprising the first time you see it, but since berries are time-based, it makes sense that they'd be able to change while on-screen.
