For the competition stages for things like the Blastoinite and Bannettenite, is it a one chance and you're done event, or can you challenge it it again to try to beat your score?

You get as many chances as you want until the competition is over.

Yes, the competitive stages generally last 7 days and you can try them as many times as you wish. THAT BEING SAID, if you didn't place high enough to get the Mega Stone prize, we don't know if they will offer it again (there's only been three so far).

BTW, if you really want to get a high score, save up for the Complexity -1 item; combined with a mega Pokemon it can basically double or triple your overall score. E.g. when the Mega Lucario stage was up I scored maybe 13,000 as is (ranking in the 13,000's of the US region). When the Mega Blastoise stage was up, I was able to score about 15,000 as is but with an added Complexity-1 powerup was able to reach about 25,000 (and the top 300~500).

The current competitive stage (Mega Banette) runs through tomorrow. I made a high score of 14,000 (no powerups) which still ranks at about the top 10,000 in the US. Seems not as many people this time around...
