Edit: But I don't know if its overworld is actually shiny... :| Sorry. It'd make sense, though, if it was.

Edit 2: I just watched a video of a shiny Giratina and... no. Its overworld wasn't shiny.

Nope.
At the moment, only battle sprites are shiny, there are no shiny menu or overworld sprites.
 
Actually, we've seen the Pikachu Coloured Pichu overworld and it's shiny :p.

That's in a game that's yet to be released,
it's a special event Pokemon,
and if you watch the Oha Suta footage, you'll notice that the menu sprites for the Gizamimi Pichu and the Pikachu colored Pichu are "regular Pichu sprites.

Its overworld is still shiny, nonetheless. Event Pokémon or not.
 
It's too early to jump to such conclusions based on one Pokemon. All you can do is wait for HGSS to see if Shiny Pokemon will be different when following you.
 
Even if Shiny Pokemon do follow you're playable character, it would unfair if the overworld sprite had to be shiny in order for it to be shiny. Because it make soft-reset that much more difficult.

The only overworld sprite that needs to show its shiny color, is the red Gyarados.
