A giant list of non-fillers designed to kill time.

Firstly:

Filler: A pointless episode with nothing to actually do with the series(A Lean Mean Team Rocket Machine;Cooking Up A Sweet Story, etc.)

Non-Filler: Any episodes vital to the storyline of the show, involving Contests, Gym Battles, Grand Festivals, introducing a new character NOT used only for fillers and also vital to the storyline(Cheryl from the Eterna Forest episodes is a filler character while Paul's brother, Reggie, is not), returning home, starting a new region, having a very important battle(Team Galactic episodes are of this variety), episodes involving catching, releasing, or evolving Pokemon, or Pokemon League battles.

I'm gonna start with a few episodes. We're goin from Kanto all the way to the latest episodes.

episode 1: Pokemon! I Choose You!(we meet Ash Ketchum, the main character of the show, and see him start his adventure with his first Pokemon, Pikachu, who soon became Pokemon's mascot for this reason. He sets off to become a Pokemon Master and outshine his new rival, Gary Oak. We also get a glimpse of Misty, the the third main character.)

Episode 2: Pokemon Emergency(we have the world's first appearence of Team Rocket, the suckiest bad guys ever to be in an anime. Misty also joins Ash and Pikachu on their way to Viridian Forest.)

Episode 3: Ash Catches A Pokemon(Ash catches his very first wild Pokemon, a Caterpie, and we discover Misty's comedic fear of bugs, which has somewhat of a purpose through the anime. ASh also catches his second pokemon, a Pigeotto. For the first time ever, Team Rocket pursues Pikachu and uses the phrase "Team Rocket's blasting off again" for the first time.)

Episode 4: Showdown in Pewter City(Ash decides to compete in the Pokemon League after seeing a sign while eating at a Pokemon Center. He has his first Gym Battle with Brock, who becomes the fourth main character in the series after deciding to travel with them.)

This would be really useful for those with a long list of episodes to catch up on and little time!

EP007 The Water Flowers of Cerulean City:
Ash gets his Cascade Badge.

EP010 Bulbasaur and the Hidden Village:
Ash catches Bulbasaur.

EP011 Charmander the Stray Pokemon:
Charmander joins Ash's party. We also learn that very nasty people exist in the Pokemon world. (JJ&M aren't counted).

EP012 Here Comes the Squirtle Squad!:
Squirtle joins Ash. Ash sure wasted no time making up for not waking up in time to get the Real!Starter Pokemon. Showing that it is unnecessary to wake up at a decent hour in order to succeed at life. Go Ash.

I always find myself watching every single episode at the beginning of a season. I start skipping about 30 episodes in. Then the gap between each episode I watch (online streaming) just keeps widening. The first season's a huge exception, though, there are so few episodes, relative to other seasons at least, that something 'important' happens in mostly every one.
 
Yeah, but some fillers are really good episodes, so you might be skipping a great episode and not even know it.

I'd wager to say its best to watch each episode at least once, and then after you've seen them all you know which episodes to skip the next time if you didn't like them.

Some of the shows best episodes are fillers, so you might be skipping some eps that could be your favorites.
 
I would like to argue that fillers don't need to be "pointless." Some of them, such as EP017 (one of the classics), are far from pointless, but regardless, do not advance the main plot, which is what makes them fillers.

EP013 - Mystery at the Lighthouse - Ash catches Krabby
EP014 - Electric Shock Showdown - Ash wins the Thunder Badge
EP015 - Battle Aboard the St. Anne (arguable) - Ash trades for a Raticate, James gets a Magikarp
EP016 - Pokémon Shipwreck (arguable) - James' Magikarp evolves
EP019 - Tentacool & Tentacruel - Misty catches Horsea
