I looked all over and could not find information regarding how to take those perfect pokemon you finally bred, what do you do afterwards to make sure they end up being 'perfect'
Is there some method to leveling up that you need to take into account to get the most out of your pokemon? For example pokerus? or does leveling with a macro brace still effect anything?
I just want to breed and make a pokemon once - its a crazy long and time consuming process, I just wanna make sure that I do it once and everything is fine.

alright, so other than EV's there isnt some other hidden factor I am missing? I can just do that in the pelagio thing too, may take more time but I wouldnt have to worry about pokerus falling off - which is two days right? - Two real days to get your pokemon to 100 basically?
 
Max stats are not the same as max level. You can have a Pokémon with maxed out stat at level 10 easily.

The effects of Pokérus doesn't go away. Besides if you manage to get one of the power items (power bracer, power anklet etc) from the Battle Royale you can get it done in minutes.
Just give your mon Pokérus, let it hold a power-item and look for a Pokémon that yields the EVs you need. For example these.
Using SOS-battles you can max out their stats after fighting seven of them, as the EV-yields increase for every one you knock out in an SOS-chain.
If you wanna see what EVs a Pokémon has just look up their stats in your party and click Y. I the stat is sparkling it's maxed out. If you accidentally get the wrong EVs you can use EV-lowering berries to remove them.

I wouldn't recommend using the Pokepelago, it takes ages to max out a stat that way.

As an example if I wanted a good Alolan Raichu. I bred a Pichu who had perfect IVs in everything but attack and its nature was timid, which increases speed but lowers attack. (Since Raichu doesn't need physical attack anyway).
I gave it a power Anklet and made sure it had Pokérus and went to Melemele Island. To increase the chance of SOS-battles happening, I always bring along an Absol with False Swipe (since Pokémon are more likely to call for help if they are low on health and your Pokémon has either Pressure, Unnerve or Intimidate.)
I found a Spearow and got it down to low health, and knocked out every new one until I had knocked out at least 7. Without the items and Pokérus it takes a lot more, but its still doable.
After making sure my Pichu had indeed maxed out its speed I gave it a Power Lens and repeated the process with Psyduck.
When both these stats are maxed out Pichu only has a couple more EVs it can be given, I usually just use the Festival Plaza to give it more HP.

After that I just leveled up and evolved the Pichu normally.
