There should be an Ice-only walkthrough of X or Y on YouTube. Any takers? If you need a reason I'll message you. I don't think Ice is that bad anyway. Are speed EVs difficult to maximize for Ice-type Pokémon? I've never seen any Ice-type Pokémon being used in walkthroughs these days other than Aurorus in TyranitarTube's walkthrough.
