I'd like to know how you guys spend your time once you reach a new City/ town in any Pokemon game. Do you immediately just go straight to business beating the town's Gym and progressing the story to move on?
Do you stay and enjoy this new town, talk to folks, spend real day hours staying here and even backtrack?

We all know how small these cities are and is difficult to actually stay there longer than you really need but it's also worth the effort to actually settle down a bit and appreciate what each city/town has to offer. What do you guys think?

I always explore the towns and cities as much as I can, but I leave the side=quests like Contests for the post-game.

Firstly, I go to the Pokemon Center to heal my team.
Second, I restock items in case I'm running low on Potions/Whatever.
Third, I try to talk to everyone, to get all available items.
Fourth, I proceed with the story and Gym.

Sometimes the order of the above may vary.

I generally wander around leisurely. Explore every nook and cranny of the layout, talk to NPCs, heal up at the local Pokemon Center (including checking the local shops). In XY, this often included sitting in chairs / on benches. In SM, sometimes this has to wait for the railroading to finish.

I see. This is wonderful! I have not played X, Y and the recent installments Sun and Moon but I do wish that they create more and more activities for each city. From the simple relaxing on a bench/chair to a more engaging "minigames" like local eating contests(?), running, swimming, more interaction with NPCs like having you Pokemon play with their Pokemon on places outside like parks and playgrounds. Inns to stay the night and relax with your Pokemon and having a companion. Things that'll make you stay longer in a particular city.

I actually tried to race on the bike track in XY. I forget the city but it was by the ocean. I figured it was going to be something like the bridge in the hoenn games.

I do wish there were more side things. I always do them at least a little before continuing on since it makes it feel more like a journey.

Cyllage City. That was where the Rock type gym was.

Yeah, I really wish they'd have done something with that race track. There's not much point in having one if it doesn't have any purpose. So much missed potential in Kalos.

Honestly I think that's the thing with Kalos. There is so much potential, so many things that would have been fantastic if they had just taken them a little further, developed them a little more.

When I'm in a city I like to explore it and get to know it, especially in my first playthrough. I like to explore every nook and cranny. Often on later plays I will breeze through the city, but I usually have more fun when I take time to explore and experience the world.

I immediately have to listen to the city's theme so I get a feel for it. It's one of my favorite things about the game. Then I explore each area and talk to everyone I can since sometimes it helps flesh out the world in ways the main story can't. Once I feel like I've seen everything, I head to the gym if there is one.

Click on every trash can, too. Even when you can't like in Sun and Moon. I will find someone's thrown out elixir, darn it!

Totally. That creepy abandoned park on Route 14 was so cool, but I don't think it did anything other than add atmosphere. That's one of the things I like about Sun and Moon. Spots like that were dedicated to finding unique Alolan Pokemon.
