Have we ever gotten a full view of the world of Pokemon, how it looks, where all the Regions (that we know of) are, and so on?

I don't know exactly what you mean with the question.
For now, canonically there's six main regions, Kanto, Johto, Hoenn, Sinnoh, Unova, Kalos .
Also there's Orre, Fiore, Almia and Oblivia as minor regions of side games, but there's not regional Pokemons.
The Pokemon world is expanded as the main games are released, so we know just some regions/coutries, and that's mostly a twin of our world.

To my knowledge no official map of the Pokemon world has been produced. The closest you'd get is the speculative map on Serebii.net and even that had to leave out Unova and Kalos because their maps don't use an actual scale.

Nope, there is no official map of the Pokémon world. The closest thing to one is the anime map that has Kanto, Sevii, Orange, Johto, Hoenn and Sinnoh, but that one's inaccurate since it shows Sinnoh directly to the East of of Kanto when it should be roughly Northwest.
