Water, as it is the most common type yet great both offensively and defensively.
 
Torn between Water (only two weaknesses, but still has offensive use unlike say Normal, and more options than Electric) and Steel (lots of resistances and lots of cool designs).
 
I don't really have one particular favourite type... but aesthetically speaking I do enjoy - quite a lot - most of the Pokémon coming from the psychic, dragon, grass, ice and bug variety.
