The maximum is 255 (1 byte long), but as the actual stat points that your Pokémon gets at Level 100 are calculated dividing by 4 the number of EVs, flooring the partial result, then multiplying it by the nature (1.1. if it's beneficial, 1.0 if it's neutral and 0.9 if it's hindering) the Pokémon has, only 252 EVs matter to the final result. In other words, a Tyranitar would have 403 in its Attack stat (Max. Attack) at Lv. 100 if it got an IV of 31 with either 252 or 255 EVs. The remaining 6 EVs ( 510 - (252 * 2) = 6 ) could be used for one point more in HP, one of the Pokémon's defenses or any other stat.
